Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they become translucent.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add the mixed vegetables and cook until they are slightly tender.
Add 2 tbsp Shyam noodles masala and salt according to taste. Mix well to coat the vegetables evenly with the spices.
Cook for a few more minutes until the vegetables are fully cooked but still have a slight crunch.
Prepare your noodles according to the package instructions. Drain them and keep aside.
Add the cooked noodles to the masala mixture and toss everything together until the noodles are well-coated with the masala.
Garnish with chopped fresh coriander leaves if desired.
